Baked Sweet Potato & Yams

When I first began Paleo, I had a hard time sticking with my grain-free ways when training for long distance runs. For me personally, Paleo and CrossFit go hand in hand — a perfect marriage of nutrition and sport. It’s when I add more cardio to the mix that I have to watch out. My metabolism goes through the roof.

I remember the feeling in my teeth when I’d get home from a long run, they were aching for bread — it was so odd. I knew my body was lacking something but I couldn’t figure it out. More often than not, I’d give into cravings and wolf down Dave’s Killer Bread with peanut butter and honey. Satisfying, yes. But I didn’t feel fit and alert. I felt bloated and fatigued.

I found I was lacking dense carbs — not in the form of bread — in the form of sweet potatoes and yams. Sweet potatoes and yams BLOW AWAY any other vegetable in the carb category and pair beautifully with additional veggies and meat, taking Paleo meals to a whole new level (….of fullness!)

GROCERY LIST **makes 6 servings

1 yam, peeled and sliced into 1/2 inch circles
1 sweet potato, peeled and sliced into 1/2 inch circles
2 TBSP coconut oil
1 tsp cinnamon
1 tsp nutmeg
salt, if desired

COOKING INSTRUCTIONS **prep time: 5 minutes, cook time: 25-30 minutes

1) Pre-heat oven to 350 degrees.

2) Melt coconut oil. Add coconut oil to a large bowl, along with yams, sweet potato, cinnamon, nutmeg and salt (if desired). Stir to coat.

3) In a large baking dish, place yams and potatoes in a single layer. Bake 25-30 minutes, or until soft when pierced with a fork, turn yams and potatoes over halfway through cooking.
