I love Mexican food.  Better yet, I love good Mexican food.  Cinco de Mayo is just around the corner and I am already saying ole’.  You can make really good Mexican food right in your own kitchen.  Start by not buying store bought guacamole.  It’s expensive and most of the time it has a lot of stuff you don’t want in it.  Avocados will be on sale, just like they are around Super Bowl time, so you can make a big batch of guacamole for just a few pesos.

I confess to being time crunched any sometimes buying packaged guacamole, but every time someone says, “Oh! Your guacamole is really good.  What’s in it?”  it has been home made. There are plenty of recipes for guacamole, but you really only need a few ingredients. This recipe is fast, easy, and best of all, it’s home made.  Pick up a few avocados and get your mash on.

 

Home Made Guacamole

2 ripe avocados
1 lime
1/2 teaspoon garlic salt
1 T. chopped fresh cilantro

Slice avocados in half, remove pits, and scoop flesh into bowl.  Juice lime into separate bowl.  Mash avocado to desired consistency and add half of lime juice, garlic salt, and chopped cilantro, mixing well.  Taste and adjust seasonings, adding more lime juice or garlic salt if desired.  Bueno! 

You can buy one of those special avocado gadgets to scoop and mash, but a spoon and a potato masher work just fine.  Leftover guacamole (who has leftovers?!) can be covered and refrigerated.  This batch lasted 2 days and stayed amazingly green with only a small bit of browning on day 2, so don’t be afraid to make it ahead of time.

Fun fact:   run cold water over the cut side of an avocado to prevent it from browning.  Cover and store in refrigerator.  Be amazed.  It really works.  (Thanks, Martha.)
