Indian Spiced slow-cooked Beef Stew

I’ve been diggin’ my crockpot these days. With the hustle and bustle of life, it’s nice to toss in a handful of ingredients, walk away and come back to a delicate meal hours later.

I had 100% grass-fed beef stew meat and a freezer full of bone broth — I was in the mood for something a little spicy — something different than your average stew. I recently read in The Columbian, Turmeric is said to be the spice of 2013. OK, so what’s Turmeric?

Turmeric is a perennial plant that belongs to the ginger family. It has been used for culinary and medicinal purposes for thousands of years. You’ll find turmeric is a key ingredient used in curry and many other Asian dishes.

Turmeric’s active medicinal ingredient is curcumin, offering many anti-inflammatory, anti-oxidant and anti-bacterial properties. It has been used to naturally treat arthritis, asthma, cold & flu. It’s also linked to prevention of the onset of type-2 diabetes. Turmeric kicks so much butt, recent studies have suggested turmeric powder or supplements — combined with a balanced, nutritious diet — may help prevent or even destroy cancer cells.

GROCERY LIST

**makes 8 servings

3 lbs 100% grass-fed beef stew meat

8 cups bone broth (I used 4 cups chicken and 4 cups beef — I couldn’t make up my mind!)

1/2 tsp sea salt

1/4 tsp fresh cracked black pepper

2 tsp turmeric

2 tsp coriander

2 tsp cumin

1/2 tsp tarragon

2 cups carrots, peeled and chopped

2 cups celery, chopped

2 -4 cups cabbage, shredded and chopped (I used 2 cups when cooking in the crockpot, I couldn’t fit anymore — and then added the remaining 2 cups the next day when reheating)

1 small can diced tomatoes, drained

COOKING INSTRUCTIONS

prep time: 15 minutes, cook time: 6-8 hours

1) In a large crockpot (If using a small crockpot, cut the ingredients in half) add all ingredients, give a little stir for good measure.

2) Put lid on crockpot, set temp to cook on low 6-8 hours.

3) Serve stew in large bowls.
