Veggie Frittata
“You say fritta, I say frittata. Fritta. Frittata…..” My apologies in advance for THAT being stuck in your head all day. Sometimes, you just gotta shake things up a bit, get a little silly. Frittata’s totally do that for me — I bet they can do that for you, too!!
Just saying the word, Frittata, is exciting!
GROCERY LIST
Makes 3 servings, prep time 5 min., cook time 20 min.
1/4 cup mushroom, chopped
1/4 cup red pepper, chopped
1/4 cup green pepper, chopped
1/4 cup yellow onion, chopped
Salt and pepper
6 eggs
2 TBSP canned coconut milk
olive oil
Avocado, sliced
salsa
COOKING INSTRUCTIONS
1) In a small sauté pan, warm olive oil over medium heat. Add veggies, salt & pepper to pan and sauté 3-5 minutes.
2) In a separate bowl, whisk together eggs and coconut milk. Add veggies to egg mixture and stir.
3) If needed, add a little olive oil to pan and warm over low heat. Pour egg mixture into pan and cook on low heat for 5 minutes.
4) In a 350 degree pre-heated oven, bake frittata 10-12 minutes. Let cool a few minutes before cutting into pie shaped pieces.
To serve, top with avocado and salsa.
