C’mon, moms and dads, it’s not too late.  You can still pull off something fun for Halloween.  A quick stop at the store on your way home and you are going to make tonight’s dinner and a great memory for your kids.  This is all about fast and easy, and is a realistically doable, fun dinner you can make, even on a weeknight.  Ready to be a super hero?

 

Spooky Pizza

1 pre-made pizza crust 
pizza sauce
2   4 ounce packages pepperoni
1 black olive
1/2 green bell pepper
1 mushroom
shredded mozzarella cheese

Preheat oven to 450 degrees F.  Put crust on large baking sheet and top with pizza sauce.  Arrange pepperoni in circle around edge of pizza.  Sprinkle mozzarella cheese evenly over top, leaving pepperoni border visible.  Cut some of pepperoni slices into squares and triangles to make shapes for mouth, nose, and eyes and arrange on pizza.  Slice olive into 4 circles and use the two flat rounds to make the eyes.  Slice bell pepper into very thin strips and use for eyebrows.  Slice mushroom and use two flat slices for ears.  Bake 10-12 minutes.  Let cool and cut into slices.

 

Make this healthier by using a whole wheat or thin crust, turkey or reduced fat pepperoni, and reduced fat mozzarella cheese.  Get some extra veggies in by serving with a side salad, or make some eerie green guacamole and make a veggie plate using the rest of your bell pepper, some baby carrots, other cut up veggies and the rest of the olives.  You will not need all of the pepperoni, but it’s always good to have extra as a lot of it will disappear along the way…
