Chocolate Chunk Oatmeal Cookies

These cookies come together in a snap for a chewy, crispy, chocolate-studded treat.  It’s a classic for a reason.

Chocolate Chunk Oatmeal Cookies

Makes 30 large cookies

Ingredients:

  • 1 C (2 sticks) butter, softened
  • 1 C dark brown sugar
  • 1/2 C sugar
  • 1 egg
  • 1 egg yolk
  • 1 T vanilla
  • 1 C old fashioned oats
  • 2 C flour
  • 3/4 t salt
  • 1 t baking soda
  • 1 t baking powder
  • 1 1/2 C semi sweet chocolate chunks
  • 1 1/2 C milk chocolate chips

Directions:

Heat oven to 325.  Line rimmed baking sheets with parchment paper.

Beat butter and sugars in stand mixer until smooth.  Add egg, egg yolk and vanilla.

Combine flour, oats, salt, baking soda and baking powder.  Add to stand mixer until combined, scrape sides if needed.

Gently stir in chocolate chips.

Scoop dough into 2-inch balls and place on prepared baking sheets.  A cookie scoop makes this easier and helps keep the sizing consistent.  Leave space between the cookies.

Bake cookies for 14-18 minutes total, splitting time between upper and lower oven racks.  Allow to rest on pan after removing from oven and transfer to a cooling rack.

Serve with milk or coffee.
