Summer is in full swing in Vancouver, WA.  From triple-digit days to out-of-school kids, it definitely feels like the middle of July.  Break up the boredom with frozen banana penguins, an easy and  adorable snack.  They take 20 minutes and provide a delicious way to beat the heat.

Frozen Banana Penguins

Makes 2 penguins

Ingredients:

  • 1 large ripe banana
  • 2 oz (4 squares) dark chocolate or 1/2 C quality chocolate chips
  • 4 edible eyeballs
  • 2 regular chocolate candies
  • 4 mini chocolate candies

Directions:

Peel and cut banana in half.  Put in freezer for at least 10 minutes.

Melt chocolate in shallow bowl.  Use microwave in 20 second bursts.

Hold banana by cut end.  Dip pointed end in melted chocolate then lay banana in bowl turning from side to side.  Use a spoon to pull chocolate up on sides.  Set on wax paper.

Quickly stick eyeballs and regular chocolate candies in “head” on top.  This is the large chocolate area by the point.

Dip mini chocolate candies in melted chocolate and stick to white area for feet.

Return to freezer for 10 minutes.  Serve.
