Brocco-love
This is a quick one and so easy I’m almost embarrassed to actually create a whole blog post about it. However I think you’ll thank me as you’re licking the roasty-goodness from your fingers.
Roasted veggies seem more and more to be what the cool kids are doing these days, so I say jump on the band wagon! I think you could roast your shoe with enough oil and salt and it would taste pretty good. Luckily roasted broccoli is way better than that and JUST. SO. YUM. Big Sis loved this so much she kept snagging bites after dinner while I was trying to put away the leftovers. I don’t think any mama is going to stop a kid from sneaking extra broccoli though, so I let her munch away.
You can of course roast just about any veggie with this method. Cauliflower roasted this way is amazing (all of you cauliflower haters just wrinkled your noses but seriously no wrinkling of noses until you’ve tried it!). Roasted Brussels sprouts are in my opinion the only way to eat them. FYI did you know it’s Brussels sprouts with an s at the end of Brussel? I’ve been calling them the wrong thing this whole time. (Don’t say I never taught you anything). I digress.
I use avocado or coconut oil most of the time. If you’re using a different kind of oil just make sure it’s a good quality and if you’re using coconut oil, you’ll need to melt it first.
**Public Service Announcement** Don’t be a broccoli pig like me and pop a burning hot piece in your mouth straight from the oven. You will burn your tongue.

Roasted Broccoli
Ingredients:
1 large broccoli crown (or a few small crowns) chopped into bite size-ish pieces
4 Tbsp. avocado oil (or more, I’m a more girl. This is my favorite; you can also find it at Costco)
2-3 tsp. sea salt (see what I said earlier about being a more girl)
Directions:
Pre-heat oven to 450°. Line a baking sheet with foil and arrange broccoli on tray. It is important that you dry the broccoli fairly well before roasting or it will take longer. At this point you can pour the oil and salt over the broccoli, give it a stir and pop it in the oven. If you’re less lazy than me you can toss the broccoli with oil and salt in a bowl before placing it on the tray. Either way it will be tasty. Roast for about 20-30 minutes depending on how toasty you like it. In my house we opt for maximum roastiness so I left it in about 30. Happy brocco-loving!
