Paleo Style Squash, Sausage & Apples
This meal is SO delish & SO easy. When I’m on the go and realize I have NO idea what to make for dinner, a quick stop at the grocery store for just FIVE ingredients makes this a GO-TO meal for me!! Mix & match any type of Squash, Apples & Sausage — you can’t go wrong!
Are you a Squash buyer? You should be. Squash keeps forever. It’s smart to pick up a few once a month. It looks awesome sitting on your counter AND it can be inspiration for your next meal!! I’d recommend either Delicata Squash or Kabocha Squash for this recipe.
As far as the apples go, I like to use a couple of tart Granny Smith’s and one sweet Honey Crisp. Yumm!!
Out of all the Sausage I’ve tried, my fave is ‘Organic Prairie’s Italian Chicken Sausage’. I’ve had luck finding it in the natural/organic freezer section at Fred Meyers. It’s perfect to have on hand, chillin’ in your freezer!! (Just pull it out in the morning; it will thaw in a few hours.)
Paleo Style Squash, Sausage & Apples
1-3 Squash, depending on size. I like Kabocha Squash the best!
8-12 links of Sausage. I buy the pre-cooked ‘Organic Prairie’ Italian Chicken Sausage – found in the frozen section of Fred Meyers Natural Department.
2-3 Apples. My favorite is 2 Granny Smith and 1 Honey Crisp.
Coconut Oil
Apple Cider Vinegar. Braggs brand (of course!!).

Cut your Squash of choice in ½, scoop out ALL seeds and gunk. Cut into serving sized pieces. Place in baking pan and bake at 350 for 45 min.
Meanwhile, scoop 2TBSP of Coconut Oil in pan over med/high heat. Sauté sliced (thawed) sausage until browned.
Chop Apples into bite sized pieces, add to Sausage. Cook for only a few minutes, you don’t want the Apples to be soggy.
Toss in a healthy pour of Apple Cider Vinegar and cook for a minute or two more.
Serve Sausage & Apples over the Squash.
