Chicken No-Noodle Soup
I’m giddy at the chance to dedicate this recipe to my Mother. I LOVE her homemade Chicken Noodle Soup – even the noodles are homemade!! She makes her soup in an extra-large soup pot that was passed down from her Dad, who was a Chef. Recently, she said she’d pass it along to me. LOVE that! So, in honor of this AmaZing soup pot – I felt it necessary to bust out some killer Paleo friendly recipes! Chicken No-Noodle Soup is both comforting and flavorful …. I promise you won’t miss the grain-filled noodles (Although, Mom’s noodles were KILLER)!! All you need is Chicken Soup Starter (see recipe on Blog or FB), 3 lbs. Chicken (I like to use breast meat), 2 small bags of baby carrots, 1 bag of Celery Hearts, 1 Onion and Salt.
I followed my nose in the herb garden and tossed in some Thyme and Parsley. It adds wonderful flavor.
Bring Chicken Soup Starter to a boil. Place Chicken in the soup pot. Chop all Veggies and toss into the soup pot. If you’re adding herbs, do so now. Add 1 TBSP salt, more or less depending on your taste.. Reduce heat to a steady boil for 20 minutes.
Turn stove top off. Remove Chicken from soup pot and place on a cutting board.
Shred Chicken.
Return shredded Chicken to soup pot. Stir.
