Jack and the Beanstalk
Here is the deal: Green beans are absolutely delicious!! And I am not talking about the ones that are nearly plastic tasting and covered in a nice coat of wax and come in a can. I am talking about your northwest freshly grown green beans that are nice, crispy, and full of flavor! These babies are nice for the bod and fresh on the taste buds. Here is how we like to accompany our crispy green beans:
Sauteed Veggies:
This is totally simple.. but here is the perfect combination to complement those crispy green beans:
- One bunch of green beans (for two people we use about 20 green beans)
- one whole sliced red bell pepper
- A quarter cup of sliced Portabello mushrooms
- one whole purple onion
- one table spoon of coconut oil
- pepper
- garlic powder
- fresh squeezed lemon
Instructions:
Set your stove top to medium heat. Use a sauteing pan and add your coconut oil. Heat the coconut oil until it is fully melted. Once the coconut oil is melted you can start adding your veggies! First, add your green beans and onion in the pan and saute for about 3 minutes.If the pan is splatting cover your veggies with a lid. Once they are heated add your red pepper and portabello mushrooms for another 5 minutes. Add your pepper and garlic powder. Once you see the veggies glazed with a nice grilled color, you may prepare them to serve! Once they are ready to go add a dash of fresh squeezed lemon! YUM!
