Spuds Make Good Buds
Try swapping these out for your typical grain side choices like rice, pasta or even quinoa. They are super simple to make and incredibly versatile. You can bake, cube and stir fry. Heck you can even microwave em’!
Try this mashed potato alternative.
What you’ll need:
-3 medium sweet potatoes
-tablespoon ground cinnamon( or more depending on your preference)
-half teaspoon of nutmeg
Wash and poke a few breather holes in the potatoes. Microwave them for approximately 5-7 minutes depending on the size of the potato and the power of your microwave. They should be squeezably soft( not hard in the middle). Cut open and let sit for a few minutes then scoop out the insides into a mixable bowl . Add the cinnamon and nutmeg, then whip by hand with a spoon or alternative mixing tool. Enjoy!
