Honey Lime Fruit Skewers
With summer around the corner I need a new recipe for fruit salad. I love honey lime glaze, it keeps apples white and add a sweet tart finish. Instead of classic “fruit salad in a bowl,” I served on large skewers. Feel free to use seasonal items and add mini marshmallows.
Honey Lime Fruit Skewers
Makes 16 skewers
Ingredients:
- 2 limes
- 1/2 C honey
- 2 lbs whole strawberries
- 2 Granny Smith apples
- 1 pineapple
- 2 oranges
- Optional: mini marshmallows
Directions:
Combine juice from limes with honey.
Wash and slice apples into 8 pieces. Cut 8 pieces in half, 16 total from each. Put in bowl, pour half of honey mixture and toss to combine. Refrigerate.
Wash and slice pineapple. Cut into large chunks. Peel oranges. I’m inpatient so I use the knife technique. Slice making 16 pieces per orange. Put bowl, add rest of honey lime mixture and toss to combine.
These steps can be done a day ahead. Do not mix strawberries with honey lime mixture, they can start to break down if they sit in the liquid. They will be fine on skewers.
To serve, wash whole strawberries. Thread 8 pieces of fruit on each skewer- 2 apple, 2 orange, 2 strawberry and 2 pineapple. If you want, hide mini marshmallows between the fruit.
When skewers are full, wrap up and refrigerate until serving.
