Chocolate Peanut Butter Swirl Cookies

Chocolate Peanut Butter Swirl Cookies combine the best of both worlds.  These cookies bake up soft and melt in your mouth; plus they look adorable with the colors mixing together.  Definitely double the recipe- these go fast!

Chocolate Peanut Butter Swirl Cookies

Makes 48 cookies

Ingredients:

Chocolate dough:

  • 1/2 C (1 stick) butter, softened
  • 1/2 C sugar
  • 1/2 C packed brown sugar
  • 1 egg
  • 1 t vanilla
  • 1 C flour
  • 1 t baking soda
  • 3/4 C unsweetened cocoa powder
  • 1/4 t salt
  • 2 T milk
  • 1 1/2 C peanut butter chips

Peanut butter dough:

  • 1/2 C (1 stick) butter, softened
  • 1/4 C sugar
  • 1/2 C packed brown sugar
  • 1 egg
  • 3/4 C creamy peanut butter
  • 1 t vanilla
  • 1/2 t baking soda
  • 1/4 t salt
  • 1 1/4 C flour
  • 1 1/2 C semi sweet chocolate chips

Directions:

Chocolate dough:

Cream butter, sugar and brown sugar in stand mixer until fluffy.  Scrape sides.

Add egg and vanilla.  Add cocoa powder, baking soda, salt and milk.  Scrape sides.

Add flour until just combined.  Add peanut butter chips and mix gently.

Form into a disk secure with plastic wrap.  Refrigerate for 2 hours.

Cream butter, sugar and brown sugar in stand mixer until fluffy.  Add peanut butter.  Scrape sides.

Add egg and vanilla.  Add baking soda and salt.  Scrape sides.

Add flour until just combined.  Add chocolate chips and mix gently.

Form into a disk and secure with plastic wrap.  Refrigerate for 2 hours.

To bake, heat oven to 350.  Line rimmed baking pans with parchment paper.  Remove dough from refrigerator.

Use a tablespoon to scoop off a piece of peanut butter dough. Roll into a ball.  Now scoop off a piece of chocolate dough and roll it into a ball.  Squish the balls together into a large ball and place on cookie sheet.

If you want, add a few extra peanut butter and chocolate chips on top.  This helps make sure the contrast is visible after baking.

If the chocolate dough gets all over your hands rinse them off.  As it warms up, it will get more messy.

Bake cookies for 12 minutes total, 6 minutes on the lower rack and 6 minutes on the upper rack.  Cookies will need to set in the pan before removing.  Cookies will firm up as they cool.
