Simple goodness, that’s what muffins are! I love them. They can be sweet or savory, a quick breakfast or a tasty treat in the afternoon with a cup of tea. Easy to whip up and have on hand any time. Fall is the time of year that I will add these to my weekly menu more often than any other time of year.

For some reason, muffins just say “fall” to me. It’s generally a busy time of year, as we all know, and muffins carry a lot of bang for my buck…and time. It takes no time at all to mix up a batch of muffins, when they are done you can easily have twelve servings of tasty homemade goodness!

Just about any flavor can find it’s way into in a muffin. From fruit, to cheese, to whole grains and even veggies. A perfectly versatile food, wouldn’t you agree? For the most part, they pack well and stay fresh if stored in a covered container. You can even bake them up ahead of time and freeze them for those times when baking is just not in the schedule.

One of my kids favorite snack options is a sliced up apple with peanut butter to dip them into. That was the idea behind my recipe for Apple Peanut Butter Muffins. The perfect “portable” apples and peanut butter snack my kids love already.

Looking for a muffin that is packed full of whole grain goodness and good for you ingredients that your family will also love? At first, I thought this would be one of those muffins that would be for the adults in my house, the kids would most likely turn their noses up at them. Well, I was wrong, my family loves them. Zucchini Carrot Muffins are amazingly moist and flavorful and you would never guess that they are also full of wholesome goodness. A great way to start your day.

Gluten-free oats can add texture and whole grain goodness to most any muffin recipe. I love it when I can add a cultured dairy product to the mix as well. That’s why Oatmeal Buttermilk Muffins are one of my all time favorite “go to” recipes. Another winning recipe that calls for gluten-free oats is Oatmeal Muffins with Banana. So moist and tasty!

Now, I can’t talk about muffin recipes without highlighting a favorite of my husband. He loves blueberry muffins, they have got to be his all time favorite. We’ve got a couple of winners here on Gling. An amazingly tasty Sugar Free Blueberry Muffin and Sunrise Blueberry Muffins. Both are tasty fruit filled muffins that make an amazing breakfast or snack.

There are so many tasty muffin options out there. Most any quick bread recipe can be made into a tasty and totally portable muffin. Enjoy them as a breakfast on the go, a snack or just because you are a muffin lover just like me.
