Chocolate Chip Oatmeal Cookies

An old time favorite, I swapped chocolate chips for seasonal red, white and blue MnM Candies.

Chocolate Chip Oatmeal Cookies

Makes 24 cookies

Ingredients:

  • 1 1/2 C brown sugar
  • 1 C (2 sticks) butter, softened
  • 1 T vanilla
  • 1 egg
  • 2 C quick-cooking oats
  • 1 1/2 C flour
  • 2 t baking soda
  • 1/4 t salt
  • 2 bags MnM Candies or 3 C chocolate chips
  • Optional: 1 C chopped nuts

Directions:

Heat oven to 350.  Line cookie sheets with parchment paper.

Use a stand mixer to combine brown sugar and butter.  Add vanilla and egg and cream until fluffy.  Add oats, flour, baking soda and salt.  Scrape sides if needed.

Add MnM candies or chocolate chips.  Add nuts if using.

Scoop dough into 2 inch balls into cookie sheet, spreading out.  I could fit 9 per pan.

Bake 10-12 minutes until lightly golden on the edges.  Cookies will set as they cool.

To cut down the fat, substitute 1/2 C unsweetened applesauce for 1 stick of butter.  The cookies will be a little more dense but healthier and still delicious.
