Schools are out and summer is here!  Super easy popsicles have exactly 2 ingredients and can be made by kids.  A fun and simple project, endless popsicle variations will keep everyone happy.

Super Easy Popsicles

Makes 6 small popsicles

Ingredients:

  • 1 small box instant pudding, your favorite flavor
  • 2 C milk
  • Optional: very small pieces of fruit, cookie or brownie, mini chocolate chips, 1/4 t flavored extracts such as mint or vanilla, etc

Directions:

Set up 6 small cups.  You can use Dixie cups, but I like sturdier (and reusable) small Red Solo cups which I found at Fred Meyer.  To get fancy, consider a popsicle mold.  They make cute and creative ones, popsicle molds make a great gift.

Cut 3 straws or popsicle sticks in half.

Whisk the pudding and milk in a bowl.  Pour into a quart sized Ziploc bag.  Dump in any additional items.

Snip the corner of the bag, pipe into small cups.  Allow to sit for 3 minutes, pudding will firm up enough to hold up the straws.

Transfer to freezer, freeze upright overnight.  You can also double the recipe and layer different flavors of puddings.
