I think I made a recipe error.  While they taste delicious, my Salted Caramel Blondies looked very little like the picture in the original recipe.  Appearances are important (says the woman with 10 kinds of sprinkles in her cupboard… seriously), but flavor is critical to good baking.

Salted Caramel Blondies are sweet, a bit salty and chewy.  They pack an indulgent punch so cut small and enjoy with coffee.

Salted Caramel Blondies

Makes 9×13 pan, 36 small blondies

Ingredients:

  • 2 C flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1 1/2 t sea salt
  • 2/3 C melted butter
  • 2 1/4 C packed dark brown sugar
  • 2 eggs
  • 3 C chocolate chips
  • 36 caramels, unwrapped and quartered
  • 1 C chocolate chips
  • Finishing salt to top the bars

Directions:

Heat oven to 350.  Line pan with parchment paper or foil.

Use a stand mixer with paddle attachment to combine butter and sugar.  Add eggs.  Add salt, baking powder, baking soda and sea salt.  Add flour.  Scrape sides if necessary.

Add caramels and 3 C chocolate chips.

Bake in oven for approximately 35 minutes until toothpick comes out clean in the center.

While blondies are still warm, sprinkle on additional 1 C chocolate chips.  They will melt so you can spread them.  Sprinkle with sea salt.  Cut when cool.
