Salmon with Avocado and Pineapple Salsa

We have friends that head off to Alaska every year and catch crazy amounts of Salmon. I’ve been lucky enough to be on the receiving end when they return. Salmon for dayzzzzzz!! I now have a freezer full of these gorgeous Salmon Filets and the opportunities for new recipes are endless!!

With the hot summer months upon us, my palate drifts towards Island flava!! Get ready to kick it up a notch – we’re adding a Bit O’ Spice to your Salmon!! To top it off, I’ve taken tropical Lime and Pineapple, married them to cool Avocado and sweet Shallots, tossing in Jalapeño just for kicks and created a Salsa that is to die for!!

Pick up the following ingredients, set your Pandora to an Island station and pour yourself a Coconut Water. The meal you’re about to make will transport you to a tropical state of mind. Enjoy the bliss!!

SALMON WITH A BIT O’ SPICE

3 Lbs. Salmon Filets

1 Onion, minced

4 cloves of Garlic, mined

½ tsp. Salt

½ tsp. Pepper

1 tsp. Cumin

1 tsp. Coriander

1 tsp. Paprika

1 Tbsp. Olive Oil

AVACADO AND PINEAPPLE SALSA

½ Pineapple, cut into bite sized pieces

2-3 Avocado, cut into bite sized pieces

3 Jalapeños, de-seeded and minced

1 Scallion, sliced

2-3 Limes, juiced

Salt and Pepper to taste

GARNISH

Cilantro, chopped

SIDE DISH

Baby Bok Choy, sautéed

In a small bowl, mix together Onion, Garlic, Salt & Pepper, Cumin, Coriander, Paprika and Olive Oil.

Spread mixture evenly over Salmon Fillets. Allow the flavors to absorb 20-30 minutes. Pre-heat grill.

While Salmon is soaking in the spice – prepare Avocado and Pineapple Salsa.

In a large bowl, mix together Pineapple, Avocado, Jalapeño, Scallion, Lime juice, Salt and Pepper. Refrigerate until ready to use.

Place Salmon Fillets on grill. Grill to desired doneness.

While Salmon is grilling, sauté Baby Bok Choy with a drizzle of Olive Oil and a dash of Salt.

Chop Cilantro.

On a plate, layer Salmon (skin removed) over Baby Bok Choy, top with Avocado Pineapple Salsa and Cilantro.
